Remove casing from pudding and place in skillet on low to medium heat for approximately 10 minutes. Stir pudding every few minutes to avoid crisping. Mix the finely chopped onion into pudding around 7 to 8 minutes of cooking pudding and continue to stir. You want the onion firm. Once pudding is thoroughly cooked, remove from heat. Serve hot with other breakfast favorites such as eggs, grits, and toast.
